Your Sauce Might Not Be As Gluten-Free As You Think

A founder tells me their teriyaki is gluten-free because "there's no flour in it." Then we read the label on the soy sauce they've been using, and the second ingredient is wheat. The marinade they built a brand around, the one they've been calling gluten-free at farmers markets for a year, has been carrying gluten the whole time. It is one of the most common and most stressful surprises I walk founders through, and it usually surfaces the moment a buyer or co-packer asks for documentation.

Gluten in a sauce or marinade is rarely obvious. It hides inside ingredients that read as single items on your kitchen recipe but are themselves compound products: a soy sauce, a spice blend, a "natural flavor," a thickener. You can build a whole formula out of things you think are clean and still land above the threshold for a truthful gluten-free claim.

Wheat, barley, and rye are the three grains that carry gluten, and their derivatives show up in condiment ingredients under names that don't say "wheat" anywhere. Here are the ones that catch founders most often.

Soy sauce (the big one)

Traditional soy sauce is brewed from soybeans and wheat in roughly equal parts. It is one of the most common sources of hidden gluten in the sauce world because it anchors so many marinades, glazes, stir-fry sauces, and umami-forward condiments. If your recipe calls for soy sauce and you have not specifically switched to a wheat-free version, assume you have gluten in the jar.

Malt vinegar and malt derivatives

Malt comes from barley. Malt vinegar, malt extract, malt syrup, and "malt flavoring" all carry gluten risk. Malt vinegar shows up in British-style condiments, brown sauces, and some pickle brines. It is worth flagging separately because most distilled and fruit vinegars are fine, which lulls founders into assuming all vinegar is safe.

Hydrolyzed wheat protein and HVP

Hydrolyzed wheat protein is exactly what it sounds like, and it appears in some savory sauces as an umami booster. The trickier cousin is "hydrolyzed vegetable protein" (HVP), which can be derived from wheat, soy, corn, or a blend. The word "vegetable" tells you nothing about the grain source, so you read the specific supplier documentation.

Some starches and thickeners

Wheat starch is an obvious problem, but "modified food starch" is ambiguous because it can be sourced from wheat, corn, tapioca, or potato depending on the supplier, and the label alone often won't tell you. Some dextrins can be wheat-derived too. The point is that "starch" on a compound ingredient's spec sheet is a question, not an answer.

Spice blends, seasonings, and anti-caking carriers

A pre-made spice blend or seasoning mix can carry wheat flour as a filler or flow agent, or gluten can ride in on a carrier used to keep the blend free-flowing. "Seasoning" and "spice blend" on your ingredient statement are compound ingredients you did not fully control, and founders treat them as one clean line when they may hide several undocumented sub-ingredients.

One more to flag: beer, ale, and grain-based spirits used for flavor are gluten sources unless specifically gluten-free or gluten-removed. The through-line: every compound ingredient in your formula, anything that is a mixture rather than a single whole food, is a place gluten can enter without appearing on your top-level recipe. Real-Ingredient Swaps That Keep the Flavor

The good news is that most of these hidden sources have a real, recognizable substitute a founder can pronounce and a shopper can trust. My preference is always to solve this with real food rather than a processed "gluten-free" system product, and in condiments you usually can. Here are the swaps I lean on first.

Tamari or coconut aminos for soy sauce

Tamari is the workhorse: a soy sauce traditionally made with little or no wheat. Many tamari products are wheat-free, though you still verify the specific brand and get documentation, because "tamari" is not a guarantee on its own. It delivers the deep, salty, fermented umami that soy sauce brings, so the swap is close to seamless in most marinades and glazes.

Coconut aminos is the other real-food option, made from fermented coconut sap and salt, naturally gluten-free and soy-free, and it reads beautifully on a clean label. The trade-offs are honest: it is milder, sweeter, and lower in sodium than soy sauce, so you rebalance by adding salt and dialing back other sweeteners to hit the same savory-sweet target. It also costs more per unit, which matters at scale.

Distilled and fruit vinegars for malt vinegar

Distilled white vinegar is gluten-free even when the base was a grain, because distillation does not carry the gluten protein over, and apple cider, wine, and rice vinegars are naturally gluten-free as well. To replace the malty character of malt vinegar, I reach for real flavor builders: a touch of molasses or dark brown sugar for toasty depth, caramelized notes from the cook, or a splash of a richer vinegar like a reduced cider. You rebuild from recognizable parts rather than reintroducing the barley.

Tapioca, rice, and arrowroot starches for ambiguous thickeners

When you need body and your current thickener is a question mark, native single-source starches are the clean answer. Tapioca starch is reliable and holds well through a hot fill. Rice starch gives a smooth, neutral body. Arrowroot works for glossy, lighter sauces, though it is less robust under long, high-heat, acidic cooks, so match it to your process. All three are named, whole-source ingredients a shopper understands, which is worth more to a real-ingredient brand than the marginal performance of a modified starch. Real spices for spice blends

Rather than buying a pre-made seasoning blend of uncertain composition, build the blend from individual, single-ingredient spices you source and document. It costs a little more labor, but it gives you complete control over what is in the jar, removes a whole category of hidden-gluten risk, and usually tastes better because you are balancing to your own recipe instead of accepting a commodity mix.

A note on fermented umami

Watch fermented ingredients used for depth. Some misos are made with barley (mugi miso), which carries gluten, while rice-based or soybean miso can be gluten-free. The principle holds across the board: real, whole umami sources like tomato, mushroom, roasted alliums, and aged cheeses are your first line, and where you use a fermented product, you confirm the grain behind it.

When a real swap will not perform, a certified gluten-free processed ingredient (a gluten-free flour blend, a modified starch documented as non-wheat, a gluten-free flavor system) is a legitimate tool. I treat it as a considered compromise, not a default: rebuild from recognizable food first, and reserve the processed option for the specific technical gap it solves.

Cross-Contact: The Part That Isn't in the Recipe

Here is the hard truth that surprises founders most: a perfectly gluten-free recipe can still produce a product that fails a gluten test. Formulation gets you a clean ingredient list. Cross-contact is a separate battle fought on the production line, and it is where naturally gluten-free sauces most often trip.

If your co-packer runs wheat-based products on the same equipment, gluten can migrate into your batch through shared kettles, fill lines, hoses, and tanks that were not fully cleaned, or through airborne wheat flour, one of the sneakiest sources because flour dust travels and settles. A sauce with a flawless recipe can pick up gluten from the room it was made in.

The controls that matter are operational, not culinary. Dedicated gluten-free lines or facilities are the cleanest answer when volume justifies them. Short of that, the levers are validated cleaning protocols between wheat and gluten-free runs, production sequencing that schedules gluten-free product first after a full sanitation, physical separation of any wheat handling, and testing to confirm the cleaning actually worked. Validating a Gluten-Free Claim: Testing and Thresholds

Once your formula is clean and your line is controlled, you validate. In the United States, "gluten-free" is a regulated label claim, and the commonly cited threshold is under 20 parts per million of gluten in the finished product. Treat that as a target to verify against current FDA rules, and confirm the requirement with a qualified process authority or regulatory consultant before you print anything.

Validation happens at two levels. First, ingredient documentation: collect a Certificate of Analysis or a gluten statement from the supplier of every compound ingredient, and confirm the grain source of anything ambiguous (that "modified food starch," that "natural flavor," that spice blend). Second, finished-product testing: send actual jars from a real production run to a lab that tests for gluten, typically by an R5 ELISA method, the standard assay for this. Testing the finished product, not just the inputs, is what catches cross-contact that the ingredient paperwork would never reveal.

A few practical notes. Test finished product from a genuine production run, because a kitchen sample made on clean home equipment tells you nothing about the co-packer's line. Build a sampling plan rather than testing one jar, since gluten from cross-contact is often uneven across a batch, and treat testing as a recurring operating cost, not a one-time gate.

Reformulating an Existing Sauce to Gluten-Free

If you already have a product on shelves and you're removing the gluten, resist the urge to swap everything at once. Changing multiple variables in one pass makes it impossible to know which swap moved your flavor, pH, or texture. Start with a line-by-line audit of your ingredient statement, flagging every compound ingredient, then substitute one at a time, tasting and measuring after each change.

Swapping soy sauce for tamari, you may find the sodium and color land close enough that little else moves. Swapping to coconut aminos, expect to rebalance salt and sweetness. Changing a thickener, re-check viscosity at fill, at 24 hours, and at a week, because a new starch can behave differently over time. And watch pH: acid can shift when you change a fermented ingredient, which matters for shelf stability in an acidified product, so re-measure and verify finished pH against spec with your process authority.

Is my sauce automatically gluten-free if I don't add any flour?

Plan to add salt and pull back on other sweeteners to hit the same target, and budget for higher cost. In many marinades and glazes the result is excellent once rebalanced, but it is a reformulation, not a drop-in.
